How can a dessert possibly be healthful??  Try this: take any dessert you already serve (such as cake, mousse, fudge, ice cream, etc.) split it in to thirds, and replace the missing 2/3 of the dessert with fresh or frozen (thawed) fruit with no sugar added.

General rules of thumb: try to keep milkfat and sources of saturated fat as low as possible.  Also keep refined carbs (white flour, sugar) as low as possible.  Fresh/frozen fruit can provide most of the sweetness any dessert needs!  Dark Chocolate is another route to go. For example, try shaving 1/3 oz over just about any dessert!

Try any combination of Tofu Mousse, low fat yogurt parfaits, etc. Aim of course, to keep saturated fat low despite the small servings.

Encourage a family to share a couple, similar to Tapas for deserts

SUMMER BERRY TERRINE

Though we certainly aren't sophisticated enough to know what a Terrine is, this dessert is well over 1/2 fresh fruit- with NO saturated fat.  Sure there's some sugar, but it IS dessert, and we have nothing against that.

Wondering how to make a dessert without cream or milkfat?  Who would have figured Cashew Cream?

While you can always just add fruit to any old dessert, this one fully embraces it.  Just try substituting the cream with soy milk, almond milk, or a lower fat milk product!
